Ingredients
  

  • 1 cup long grain white rice
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz cream of celery soup
  • 1 can 10.5 oz cream of chicken soup
  • 1 1/2 cups water
  • 4 boneless skinless chicken breasts
  • 1 envelope onion soup mix
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven: Set your oven to 350°F (175°C).
  • Prepare the baking dish: Lightly grease a 9x13-inch baking dish.
  • Mix the base ingredients: In the prepared baking dish, combine the rice, cream of mushroom soup, cream of celery soup, cream of chicken soup, and water. Stir until evenly mixed.
  • Add the chicken: Season the chicken breasts with salt and pepper. Place them on top of the rice mixture, pressing them slightly into the mixture.
  • Top with onion soup mix: Sprinkle the onion soup mix evenly over the chicken and rice.
  • Bake the casserole: Cover the dish tightly with aluminum foil and bake for 1 1/2 hours. Do not peek while it’s baking!
  • Rest and serve: Remove the casserole from the oven and let it sit for a few minutes before serving. Enjoy hot, paired with your favorite sides.

Notes

For extra vegetables, add a cup of frozen mixed vegetables before baking. Swap chicken breasts with chicken thighs for a richer flavor. Sprinkle cheese on top during the last 10 minutes for a cheesy finish.
