Ingredients
  

  • 2 ounces blanco tequila 100% agave
  • 4–6 ounces Topo Chico sparkling mineral water chilled
  • Pinch sea salt optional

  • Pop your highball or rocks glass in the freezer for 5 minutes. Trust me, it makes a difference.
  • Cut the lime in half, press with a handheld juicer, then measure ½ lime (about 1 ounce) into the chilled glass.
  • Pour in 2 ounces of blanco tequila and sprinkle a pinch of sea salt. Give it a gentle stir with a bar spoon.
  • Fill the glass three-quarters full with large ice cubes to minimize dilution.
  • Slowly pour in about 4–6 ounces of sparkling water, tilting the glass to preserve bubbles.
  • Float a lime wheel on top, drop in a thin lime wedge, and insert a straw if desired. Listen for the fizz—it's ready to sip.

Notes

During testing, avoid overfilling the glass to keep the drink bubbly. For a sweeter drink, stir in agave nectar. Choose high-altitude Topo Chico bottles for extra fizz.
