Ingredients
  

  • 6 pork chops bone-in
  • 4 large Russet or Yukon Gold potatoes peeled and thinly sliced
  • 1 large yellow onion thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 can 14 oz chicken broth
  • Salt and freshly ground black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with butter or cooking spray.
  • Layer the Potatoes and Onion: Arrange the thinly sliced potatoes and onion in the bottom of the baking dish. Season with salt and pepper.
  • Prepare and Season the Pork Chops: Season both sides of the pork chops with salt, pepper, garlic powder, onion powder, and paprika.
  • Sear the Pork Chops: In a skillet over medium heat, sear the pork chops until golden brown on both sides. Set aside.
  • Make the Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add chicken broth, whisking continuously to prevent lumps. Bring to a boil and allow to thicken slightly. Season with salt and pepper to taste.
  • Assemble the Casserole: Place the seared pork chops on top of the potato and onion layer. Pour the thickened sauce evenly over the pork chops and potatoes.
  • Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes, or until the potatoes are tender and the pork chops are cooked through.
  • Serve: Let the casserole sit for a few minutes before serving to allow the flavors to meld.

Notes

For a richer version, replace some of the chicken broth with cream or add shredded cheese between the layers. For a lighter version, use boneless pork chops and olive oil instead of butter.
