Ingredients
  

  • 2 large chicken breasts
  • 2 ripe nectarines sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • 6 cups mixed salad greens
  • ¼ cup crumbled feta cheese
  • ¼ cup sliced almonds
  • ¼ cup red onion thinly sliced
  • ½ cup balsamic vinaigrette

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Place chicken breasts on a baking sheet and drizzle with olive oil. Season with salt, pepper, dried thyme, and garlic powder.
  • Arrange nectarine slices around the chicken on the baking sheet.
  • Bake for 25-30 minutes, or until chicken is cooked through (internal temperature should reach 165°F or 74°C) and nectarines are tender.
  • Remove from the oven and let the chicken cool slightly before slicing into thin strips.
  • In a large salad bowl, combine mixed salad greens, crumbled feta cheese, sliced almonds, and red onion.
  • Top with sliced chicken and roasted nectarines. Drizzle with balsamic vinaigrette and toss gently to combine.
  • Serve immediately and enjoy the harmony of sweet and savory flavors.

Notes

Substitute peaches or plums for nectarines, or goat cheese for feta, for a different twist. Grilled chicken adds a smoky flavor, perfect for summer.
