Tater Tot Casserole

This Tater Tot Casserole is a cheesy, crispy comfort food made with ground beef, cheddar cheese, mixed vegetables, and golden tater tots. Perfect for a family dinner or potluck!

Ingredients
  

  • 1.5 pounds lean ground beef (85/15, grass-fed recommended)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 0.5 cup plain whole milk Greek yogurt
  • 1 cup frozen mixed vegetables (peas, carrots, corn) thawed slightly
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon smoked paprika or regular paprika
  • Salt and freshly cracked black pepper to taste
  • 2 cups shredded sharp cheddar cheese divided
  • 32 ounce bag frozen tater tots thawed slightly

Instructions
 

  • Preheat the oven to 375°F and grease a 9x13-inch baking dish with butter or nonstick spray.
  • Cook ground beef, diced onion, and garlic until beef is browned. Drain excess fat.
  • Add condensed soup, Greek yogurt, Worcestershire sauce, paprika, salt, and pepper. Fold in mixed vegetables.
  • Spread beef-vegetable mixture in the baking dish. Sprinkle 1 cup of cheddar cheese on top.
  • Arrange tater tots in neat rows over the cheese layer.
  • Scatter the remaining 1 cup of cheddar over the tots. Optionally, broil for a golden finish.
  • Bake for 30-35 minutes until tots are crisp and cheese is bubbling.
  • Let the casserole rest before serving. Garnish with chopped chives or parsley.

Notes

To prevent a soggy bottom, preheat the baking dish before layering. Customize with different proteins, veggies, or cheeses. Freeze leftovers for future meals.
