Ingredients
  

  • 1 can 14 3/4 oz salmon, drained and flaked
  • 1/4 cup onion finely chopped
  • 1/4 cup cornmeal
  • 1/4 cup flour
  • 1 egg
  • 3 tablespoons mayonnaise
  • Vegetable oil for frying

Instructions
 

  • Prepare the Salmon: Open the can of salmon and drain thoroughly. Place the drained salmon in a mixing bowl and flake it evenly with a fork.
  • Mix the Ingredients: Add the finely chopped onion, cornmeal, flour, mayonnaise, and egg to the bowl with the salmon. Stir until well combined into a cohesive batter.
  • Shape the Patties: Using your hands, shape the mixture into 6 patties about the size of a standard burger.
  • Cook the Patties: In a skillet, heat a small amount of oil over medium heat. Add the patties and cook for 3-4 minutes per side, or until golden brown and crispy. Turn only once to ensure even cooking.
  • Drain and Serve: Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve warm with your favorite side.

Notes

For added flavor, mix in finely chopped bell peppers, spinach, or corn. Spice it up with Cajun seasoning, jalapeños, or hot sauce. To make it gluten-free, use almond flour and gluten-free cornmeal. Bake at 375°F (190°C) for a healthier option or use an air fryer for a crispy texture.
