S'mores Snack Mix with Pretzels

Ingredients
  

  • 4 cups mini pretzel twists or pretzel squares use a sturdy pretzel; gluten-free works too
  • 3 cups Golden Grahams cereal or 3 cups broken graham crackers in small bite-size pieces
  • 2 cups mini marshmallows use fresh, soft marshmallows
  • 1 1/2 cups milk chocolate chips or semi-sweet/dark chocolate if preferred
  • 1/2 cup white chocolate chips optional, for contrast and vanilla flavor
  • 1 tablespoon neutral oil such as canola, vegetable, or refined coconut oil
  • 1/2 cup mini M&M's or chocolate candies use seasonal colors for holidays if desired
  • 1/4 teaspoon fine sea salt
  • flaky sea salt for sprinkling on top, optional but recommended

Instructions
 

  • Line a large baking sheet with parchment paper or wax paper to keep the snack mix from sticking and make cleanup easy.
  • In a large mixing bowl, gently toss together the mini pretzels, Golden Grahams cereal (or graham cracker pieces), and mini marshmallows. Try not to crush the cereal so you keep nice, crunchy pieces.

  • Pour the mixture out onto the prepared baking sheet and spread it into an even layer. Aim for a mostly single layer with some overlap so the chocolate has plenty to cling to.
  • In a microwave-safe bowl, combine the milk chocolate chips, white chocolate chips (if using), and neutral oil. Microwave in 20–30 second bursts, stirring after each, until the chocolate is smooth and glossy, about 1–1 1/2 minutes total. Alternatively, melt the chocolate in a heatproof bowl set over a pot of gently simmering water, stirring until smooth.

  • Drizzle about two-thirds of the melted chocolate over the snack mix on the pan. Gently toss with clean hands or a spatula to lightly coat the pieces, leaving some more chocolatey than others.
  • Drizzle the remaining melted chocolate over the top in thin streams. Quickly sprinkle on the mini M&M's (or other chocolate candies), the fine sea salt, and a pinch or two of flaky sea salt if using. Work fairly quickly before the chocolate sets.

  • Allow the snack mix to cool at room temperature until the chocolate is firm, about 25–30 minutes. If your kitchen is warm, place the pan in the refrigerator for 15–20 minutes to help it set.
  • Once the chocolate is fully set, break the mix into large clusters or chunks. Transfer to a serving bowl, or portion into bags or jars for gifting.

Notes

Yield: about 10 cups of snack mix (8–12 servings, depending on portion size). For variations, try stirring 1/4 cup creamy peanut butter into the melted chocolate, adding 1 cup roasted nuts, using seasonal candies for holidays, or swapping in dark chocolate for a less-sweet mix. Store in an airtight container at room temperature for up to 5 days, in the refrigerator for up to 1 week, or freeze for up to 1 month. Let chilled or frozen mix sit at room temperature briefly before serving.
