Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 5 cloves garlic minced
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1 teaspoon Italian seasoning
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Coat the Chicken: Combine flour, salt, and pepper in a resealable plastic bag. Add chicken and shake until well coated.
  • Sear the Chicken: Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown, about 3-4 minutes per side. Transfer to the slow cooker.
  • Sauté Veggies: In the same skillet, sauté garlic and bell peppers until just tender. Transfer to the slow cooker, pouring over the chicken.
  • Make the Sauce: Mix chicken broth, lemon juice, and Italian seasoning. Pour over chicken and peppers in the slow cooker.
  • Slow Cook: Cover and cook on low for 4-5 hours until the chicken is tender.
  • Finish: Sprinkle with parsley and Parmesan cheese before serving.

Notes

For a creamy version, add a splash of heavy cream during the last 30 minutes of cooking. Enjoy!
