  • 8 oz cream cheese softened (use full-fat for the creamiest texture)
  • 10 oz Rotel diced tomatoes & green chilies drained slightly (for less liquid)
  • 1 cup shredded sharp cheddar cheese (or Colby Jack for milder notes)
  • 1/2 cup shredded mozzarella cheese (melts to a perfect stretch)
  • 1 Tbsp finely chopped fresh cilantro (optional, adds herbal brightness)
  • 1/2 tsp garlic powder (or 1 small garlic clove, minced)
  • 1/4 tsp onion powder
  • 1-2 tsp finely diced jalapeño (seeded for less heat)
  • Pinch kosher salt and freshly ground black pepper
  • Tortilla chips, pita chips, or sliced bell peppers for serving

Instructions
 

  • Soften the cream cheese at room temperature for 15 minutes. This speeds up mixing and avoids lumps.
  • In a saucepan over low heat, melt the cream cheese, stirring constantly with a silicone spatula to prevent sticking.
  • Scrape the can to get every last drop for that signature tang in the dip.
  • Add garlic powder, onion powder, salt, and pepper. Adjust seasoning to taste.
  • Fold in shredded cheddar and mozzarella until fully melted and silky.
  • Stir in cilantro and diced jalapeño. Transfer dip to a warmed serving bowl and enjoy with chips or veggies.

Notes

When testing this recipe, draining the Rotel slightly prevents a watery dip. Full-fat cheeses melt more smoothly. For an ultra-creamy texture, whip the cream cheese before adding other ingredients. Microwave option: heat cream cheese and Rotel in a microwave-safe bowl for 1 minute, then add cheese and heat until melted.
