Ingredients
  

  • 40-45 mini pretzels twist style or square “snaps”
  • 40-45 Rolo candies unwrapped; about 1 standard 10–11 oz bag
  • 40-45 pecan halves whole halves; lightly toasted if desired
  • sea salt flakes optional, for sprinkling on top
  • colored M&M’s or candy-coated chocolates optional, for a nut-free topping instead of pecans
  • holiday sprinkles optional, for decorating

Instructions
 

  • Preheat your oven to 250°F (120°C). This gentle heat will soften the Rolos without burning the chocolate or pretzels.
  • Line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  • Lay the mini pretzels in a single layer on the prepared baking sheet, spacing them slightly apart so the melted chocolate and caramel don’t run together.

  • Place one unwrapped Rolo candy in the center of each pretzel. Do not press down yet; just set them on top.

  • Bake for 3–4 minutes, just until the Rolos look glossy and slightly soft but still hold their shape. Check at 3 minutes the first time you make them, as ovens vary.

  • Remove the tray from the oven. Working quickly, gently press one pecan half onto each softened Rolo so the chocolate and caramel spread slightly and grip the pretzel. For a nut-free version, press an M&M or other small candy on top instead of a pecan.

  • While the chocolate is still soft, lightly sprinkle sea salt flakes and/or holiday sprinkles over the tops so they adhere.

  • Let the Rolo Pretzel Turtles cool at room temperature until the chocolate is firm, about 30–45 minutes, or chill the tray in the refrigerator for 15–20 minutes to speed things up. Once set, transfer to an airtight container or serving dish.

Notes

To toast pecans, warm them in a dry skillet over low heat for 3–4 minutes, stirring often, until fragrant, then cool before using. Watch the oven closely: an extra minute can over-melt the Rolos into flat puddles. For gifting, stack turtles in small cellophane bags or tins with parchment between layers. Store at room temperature up to 1 week, in the fridge up to 2 weeks, or freeze up to 2 months.
