Ingredients
  

  • 4 boneless, skin-on chicken thighs (about 1.5 lbs)
  • 1 tablespoon Himalayan pink salt (use fine grind for easy rub)
  • 1 teaspoon granulated sugar (lightens salt’s edge)
  • 1/2 teaspoon garlic powder (or 1 clove minced fresh)
  • 1/2 teaspoon smoked paprika (adds a hint of smokiness)
  • 1 piece lemon (zest)
  • 2 tablespoons extra-virgin olive oil (e.g. Lucini brand)
  • Freshly ground black pepper to taste
  • Optional: 1 sprig fresh rosemary or thyme

Instructions
 

  • Lay chicken thighs on a baking sheet and pat each piece completely dry with paper towels.
  • In a small bowl, whisk together Himalayan salt, sugar, garlic powder, smoked paprika, lemon zest, and black pepper.
  • Drizzle olive oil over the chicken, then rub the spice mix evenly on all sides. Add optional herbs.
  • Pop the baking sheet into the fridge for at least 1 hour. This dry-brine process enhances flavor.
  • Preheat a skillet over medium-high heat, then add oil.
  • Place thighs skin-side down, sizzle until golden brown. Avoid moving them around too much.
  • Turn the thighs, add butter or oil, and baste with the pan juices. Cook further.
  • Roast in a preheated oven until fully cooked.
  • Let the chicken rest before cutting and serving.

Notes

If you prefer a stronger garlic flavor, add more garlic to the seasoning mix. Use this pink salt trick on various proteins and vegetables as desired.
