Ingredients
  

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats
  • 1 1/2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat the oven: Set your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • Cream butter and sugars: In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
  • Add eggs and vanilla: Beat in the eggs and vanilla extract until well combined.
  • Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  • Incorporate oats and chocolate chips: Gently stir in the quick oats and chocolate chips until evenly distributed throughout the dough.
  • Bake: Press the dough evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Cool and cut: Allow the bars to cool in the pan before cutting into squares or rectangles.

Notes

Add chopped nuts or dried fruit for extra flavor and texture. For a gluten-free version, use gluten-free flour. To make it vegan, substitute with vegan butter and flaxseed eggs.
