Ingredients
  

  • 1 lb ground beef 85/15 lean for juiciness
  • 1 cup ketchup homemade or your favorite brand
  • 1/4 cup brown sugar light or dark, your call
  • 2 tbsp apple cider vinegar for brightness
  • 1 tbsp Worcestershire sauce
  • 1/2 cup pepperoncini juice from the jar of pepperoncini; adds tang
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and freshly ground black pepper to taste
  • 8 soft hamburger buns or slider rolls brioche recommended

Instructions
 

  • Heat a large skillet over medium-high. Add ground beef and cook until no pink remains, about 5–6 minutes.
  • Tilt the pan and skim off liquid fat to avoid soggy buns.
  • Cook chopped onion and green pepper until softened, about 4 minutes.
  • Stir in garlic for 30 seconds until fragrant.
  • Combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, pepperoncini juice, chili powder, and smoked paprika. Simmer for 10-12 minutes.
  • Adjust seasonings to taste. Toast buns for assembly.
  • Pile the sloppy joe mixture onto buns. Top with desired toppings and enjoy.

Notes

If you like a saucier sandwich, add beef broth. Fresh garlic makes a difference, toast buns before serving.
