Ingredients
  

  • 4 boneless, skinless chicken breasts tenderized
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped, jarred in oil
  • 1 cup chicken broth low-sodium
  • 1 cup heavy cream or half-and-half
  • ½ cup Parmesan cheese freshly grated
  • ¼ teaspoon red pepper flakes optional
  • 2 tablespoons fresh basil chopped
  • 1 teaspoon + 1 tablespoon cornstarch and water optional slurry to thicken

Instructions
 

  • Place each chicken breast between two sheets of parchment and gently pound to ½-inch thickness. Season both sides with Italian seasoning, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook 3–4 minutes per side until golden brown, then transfer to a plate and cover with foil.
  • Reduce heat to medium, add minced garlic and sun-dried tomatoes, stirring until fragrant and lightly caramelized.
  • Pour in chicken broth and scrape up browned bits. Simmer until reduced by half, concentrating the flavor.
  • Stir in heavy cream and Parmesan cheese, simmering until silky. Add cornstarch slurry if a thicker consistency is desired.
  • Nestle the seared chicken back into the sauce, then simmer 5–7 minutes until internal temperature reaches 165 °F, spooning sauce over the top.
  • Stir in fresh basil and optional red pepper flakes for brightness and gentle heat.
  • Plate the chicken, spoon extra sauce over each breast, and garnish with additional Parmesan or basil as desired. Enjoy with your favorite side.

Notes

Leftovers keep in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Thaw overnight and reheat gently with a splash of cream to refresh the sauce.
