Ingredients
  

  • 1 ½ pounds lean ground beef or turkey
  • ½ cup finely chopped white onion
  • 1 tablespoon minced garlic
  • 1 cup seasoned bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1 large egg lightly beaten
  • cup cottage cheese
  • ½ cup BBQ sauce
  • 2 pounds potatoes peeled and diced
  • ½ cup unsalted butter
  • ½ cup sour cream
  • ½ cup warm milk or half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 6 slices thick bacon cooked and crumbled
  • 1 ½ cups shredded cheddar cheese

Instructions
 

  • Preheat the oven: Preheat to 375°F (190°C) and prepare a 9x13-inch baking pan by spraying it with nonstick cooking spray.
  • Prepare the meat mixture: In a large bowl, combine the ground beef or turkey, onion, garlic, bread crumbs, Worcestershire sauce, beaten egg, cottage cheese, and BBQ sauce. Mix until evenly combined.
  • Bake the meatloaf: Spread the meat mixture evenly in the prepared baking pan. Bake in the preheated oven for 30 minutes.
  • Prepare the mashed potatoes: While the meatloaf is baking, boil the diced potatoes in a pot of water over medium heat until tender, about 15 minutes. Drain and return the potatoes to the pot.
  • Mash the potatoes: Add the unsalted butter to the potatoes and mash until smooth. Mix in the sour cream, warm milk or half-and-half, salt, and pepper until well-combined.
  • Layer the casserole: After 30 minutes, remove the meatloaf from the oven and drain any excess grease. Spread the mashed potatoes evenly over the meatloaf layer.
  • Top with cheese and bacon: Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potatoes.
  • Final bake: Return the casserole to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Serve: Let the casserole cool slightly before serving.

Notes

For added flavor, consider using smoked cheddar cheese or adding chives to the mashed potatoes.
