Ingredients
  

  • 4 fillets cod 6 oz each, skinless & boneless
  • 3 tablespoons unsalted butter melted (or ghee/vegan butter)
  • 2 cloves garlic minced
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 teaspoon lemon zest from 1 lemon
  • 1 tablespoon fresh dill chopped (or 1 tsp dried)
  • 1 tablespoon olive oil for greasing
  • Salt and pepper to taste
  • Lemon slices optional garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet or dish with parchment paper or lightly grease with olive oil.
  • Pat cod fillets dry with paper towels, then season both sides with salt and pepper.
  • In a small bowl, whisk together melted butter, minced garlic, fresh lemon juice, and lemon zest until smooth.
  • Place cod fillets on the prepared baking sheet and brush each with half of the lemon-dill butter sauce.
  • Bake for 12–15 minutes, or until the fish flakes easily and turns opaque. Broil 1–2 minutes for a golden top if desired.
  • Remove from oven, baste with reserved sauce, garnish with fresh dill and lemon slices, then serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For crispier edges, broil for 1–2 minutes before serving.
