Ingredients
  

  • 8 lamb rib chops
  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 lemon zest and juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey optional
  • Kosher salt and freshly ground black pepper to taste
  • Pinch red pepper flakes optional

Instructions
 

  • Whisk together olive oil, garlic, rosemary, thyme, lemon zest and juice, mustard, honey, salt, pepper, and red pepper flakes in a medium bowl.
  • Pat lamb chops dry and marinate for at least 30 minutes. Preheat grill, grill chops for 4–5 minutes per side for medium-rare.
  • Let the chops rest, then serve garnished with fresh herbs and lemon wedges.

Notes

Let chops sit out 20 minutes before grilling for even cooking. Longer marinating time enhances flavor. Serve with roasted potatoes or a Greek salad.
