Ingredients
  

  • 1 cup vanilla wafer crumbs about 100 wafers, crushed
  • 1 cup finely chopped pecans or walnuts for a twist
  • 1/4 cup light corn syrup sub maple syrup for depth
  • 1/4 cup bourbon choose mid-shelf brand
  • 1/4 cup granulated sugar adjust sweetness
  • 8 ounces semi-sweet chocolate chips or chopped bittersweet 60–70% cacao
  • 2 tablespoons unsalted butter room temperature
  • Powdered sugar for rolling, optional

Instructions
 

  • Stir vanilla wafer crumbs, chopped pecans, and granulated sugar in a large bowl until evenly mixed.
  • Pour in bourbon and corn syrup, mixing until a thick dough forms; let rest 10 minutes.
  • Scoop and roll dough into 1-inch balls, using powdered sugar on hands if mixture is sticky.
  • Place balls on parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  • Gently melt chocolate chips and butter in a double boiler or microwave in 20-second intervals, stirring until smooth.
  • Using forks or a dipping tool, coat each chilled ball in melted chocolate, tapping off excess.
  • Refrigerate dipped balls for another 30 minutes, then roll in powdered sugar for a festive finish.

Notes

For a shinier coat, stir in 1 tsp vegetable oil with melted chocolate; store in airtight container.
