Ingredients
  

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional, for a smoky flavor

Instructions
 

  • Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper or lightly grease them.
  • Wash and peel the potatoes (if desired). Slice potatoes thinly using a mandoline slicer or a sharp knife.
  • Place potato slices in a bowl of cold water and soak for at least 30 minutes to remove excess starch.
  • Drain the potato slices and pat them dry with a clean towel.
  • Toss the potato slices in a large bowl with olive oil until evenly coated.
  • Arrange slices in a single layer on the prepared baking sheets. Sprinkle with sea salt, black pepper, and paprika, if using.
  • Bake for 15-20 minutes, flipping the slices halfway through, until golden and crispy. Watch carefully to prevent burning.
  • Remove from the oven and let chips cool on a wire rack for a few minutes before serving.

Notes

Experiment with different types of potatoes, seasonings, or dips for variety. For extra crispiness, bake chips on a cooling rack placed over the baking sheet.
