Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 cup soy sauce traditionally brewed
  • 1/2 cup water or pineapple juice for a fruity twist
  • 1/2 cup sugar white, brown, or honey
  • 4 cloves garlic mashed
  • 2 tbsp fresh ginger thinly sliced
  • Cooking spray or oil for the grill

Instructions
 

  • Prepare the Marinade: In a large bowl, combine the soy sauce, water (or pineapple juice), and sugar. Stir until the sugar is completely dissolved. Add the mashed garlic and sliced ginger.
  • Marinate the Chicken: Submerge the chicken thighs in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 24 hours, or up to 3 days for deeper flavor.
  • Preheat the Grill: Set the grill to high heat and lightly oil the grates with cooking spray or oil.
  • Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken until well-marked and cooked through, about 6-8 minutes per side.
  • Simmer for Tenderness: After grilling, transfer the chicken to a pot over the grill or stovetop. Add fresh teriyaki sauce and cover. Simmer for 5-10 minutes to keep the chicken moist and enhance its flavor.
  • Serve: Serve hot with grilled pineapple, white rice, or a fresh salad with tropical fruits like mango or papaya.

Notes

For a spicier version, add 1 tsp of sriracha or crushed red pepper to the marinade. The marinade also works well with pork or beef.
