Ingredients
  

  • 4 slices bread whole-grain, sourdough, or your favorite sandwich loaf
  • 2 tablespoons unsalted butter softened (or olive oil spread)
  • 4 ounces sharp cheddar cheese sliced (Tillamook or Sargento work great)
  • 2 ounces mozzarella sliced (for extra stretchiness—optional)
  • 1 teaspoon Dijon mustard adds a tangy kick
  • 1 small garlic clove garlic minced (optional—brings warmth)
  • Pinch sea salt and freshly cracked black pepper

Instructions
 

  • Preheat your skillet over medium-low heat. A cast-iron pan gives the best even browning.
  • In a small bowl, mix softened butter with minced garlic (if using). Spread a thin layer on one side of each bread slice. Flip slices so the buttery side faces down.
  • Place two slices, butter-side down, in the skillet. Spread Dijon mustard on the top side of bread in the pan. Layer cheddar slices evenly, then add mozzarella. Season with a pinch of salt and pepper.
  • Top with remaining bread slices, butter-side up. Cook until golden brown and cheese is melted, flipping halfway through.
  • Transfer sandwich to a cutting board. Let it rest for a minute. Slice in half and serve hot.

Notes

Bread choice matters—day-old bread holds up better than fresh-baked. Let cheese sit at room temperature for even melting. Customize with different cheeses, herbs, or veggies for your preference.
