Ingredients
  

  • 2 cups milk preferably full-fat
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 6 tablespoons butter melted
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • A pinch of salt
  • 2 tablespoons granulated sugar
  • Vegetable oil for frying
  • Powdered sugar for dusting

  • Mix Wet Ingredients:
  • In a medium-sized mixing bowl, whisk together the milk, egg, vanilla extract, and melted butter until well combined.
  • Add Dry Ingredients:
  • Stir in the salt, baking soda, and granulated sugar until fully incorporated. Gradually fold in the flour, mixing until the batter is smooth and lump-free.
  • Prepare for Frying:
  • Transfer the batter to a gallon-sized resealable plastic bag. Set aside for a few minutes to rest. Meanwhile, pour vegetable oil into a frying pan to a depth of about 1/2 inch and heat over medium-high heat.
  • Check Oil Temperature:
  • Test the oil by dropping a small amount of batter into it. If the batter sizzles and bubbles form around its edges, the oil is ready. If not, adjust the heat accordingly.
  • Fry the Bites:
  • Snip a small corner off the plastic bag and squeeze the batter into the hot oil, forming small circles or bite-sized shapes. Fry until the underside is golden brown, then gently flip to cook the other side.
  • Drain and Dust:
  • Use a slotted spoon to transfer the funnel cake bites to paper towels to drain excess oil. Dust with powdered sugar before serving.

Notes

For variations, try adding cinnamon or nutmeg to the powdered sugar for extra flavor, or serve with drizzles of chocolate, caramel, or fruit compote. For a gluten-free option, substitute with a gluten-free flour blend.
