Ingredients
  

  • cups all-purpose flour spooned & leveled
  • ½ tsp baking powder
  • ¼ tsp fine sea salt
  • 1 cup unsalted butter room temp
  • ¾ cup granulated sugar
  • 1 large egg room temp
  • 2 tsp pure vanilla extract
  • Extra granulated or sanding sugar for rolling

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream butter and sugar until pale and fluffy.
  • Stir in the egg and vanilla until smooth and glossy.
  • Gradually fold in the dry mix until just combined.
  • Scoop dough into balls, roll in sugar, and chill for 15 minutes.
  • Arrange on baking sheets, flatten slightly, and bake for 8-10 minutes.
  • Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool.

Notes

Substitute up to 2 tablespoons of sugar for less sweetness. For a nuttier flavor, try whole-wheat pastry flour. Room-temperature ingredients blend better for smoother batter. Chill dough enhances shape retention and flavor.
