Ingredients
  

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary crushed
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 2 medium carrots peeled and cut into 1-inch rounds
  • 1 medium yellow onion sliced into half-moons
  • 8 ounces baby potatoes halved
  • 2 tablespoons fresh lemon juice juiced just before adding

Instructions
 

  • Place chopped carrots, onion, and potatoes in the bottom of a 6-quart Crockpot.
  • Whisk together chicken broth, Greek yogurt, garlic, thyme, rosemary, smoked paprika, salt, and pepper until smooth.
  • Pat chicken thighs dry and place on top of the veggies in the Crockpot.
  • Pour yogurt-broth mixture over the chicken and vegetables without stirring. Cook on Low for 4–5 hours or High for 2–3 hours.
  • Stir in fresh lemon juice, adjust seasoning, and thicken the sauce if desired. Serve hot straight from the Crockpot.

Notes

Chicken thighs stay extra juicy. For a creamier gravy, cook uncovered at the end. Substitute baby potatoes for sweet potatoes for a sweeter taste.
