Ingredients
  

  • 2 pounds cooked chicken shredded (rotisserie or poached breast)
  • 8 ounces cream cheese softened (Philadelphia is recommended)
  • 1 cup sour cream or plain Greek yogurt (Daisy or Chobani)
  • 1 packet ranch seasoning mix (Hidden Valley classic)
  • 1 cup shredded sharp cheddar cheese (freshly grated)
  • 6 slices bacon cooked and crumbled (Applewood-smoked recommended)
  • 2 tablespoons chopped fresh chives or green onions
  • 1/4 teaspoon cayenne pepper or a few dashes of hot sauce
  • Salt and black pepper to taste

Instructions
 

  • Place shredded chicken in a medium mixing bowl; set aside.
  • Microwave the cream cheese for 20-30 seconds until easily blendable, then stir until smooth.
  • Combine the ranch seasoning mix with cream cheese, sour cream, and salt and pepper, mixing until smooth.
  • Stir in the shredded chicken and crumbled bacon, stirring gently to coat.
  • Transfer the mixture to a slow cooker set to LOW or a saucepan over low heat, sprinkle half the cheddar on top, cover, and let it warm for 20 minutes.
  • Stir in the remaining cheddar, taste for seasoning, then sprinkle chopped chives or green onions before serving.

Notes

For a thicker dip, stir in cream cheese at the end; for a looser spread, add a splash of milk. Use whole-milk Greek yogurt for extra creaminess; poach chicken in stock with onion and garlic for added depth. Grate your own cheddar for better melt. Avoid overmixing the chicken for better texture.
