Ingredients
  

  • 2 pounds ground beef
  • 3 cups small-diced peeled russet potatoes
  • 1 medium onion small diced
  • 4 garlic cloves minced
  • 1 can 15.5 oz red kidney beans, drained and rinsed
  • 1 can 14 oz diced tomatoes with green chilies
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven: Set your oven to 375°F (190°C).
  • Brown the beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks (about 8 minutes). Drain excess fat and set aside.
  • Prepare the base: In a greased 9x13-inch casserole dish, layer the diced russet potatoes evenly across the bottom. Season with salt and pepper.
  • Add onions and garlic: Distribute the diced onion and minced garlic over the potatoes.
  • Layer the beef and beans: Spread the browned ground beef evenly over the potato and onion layer. Then, add the drained kidney beans.
  • Add tomatoes: Pour the diced tomatoes with green chilies over the beef and beans layer.
  • Bake the casserole: Cover with foil and bake for 45 minutes.
  • Add cheese: Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve: Let the casserole cool for a few minutes before serving. Enjoy warm!

Notes

Add corn or bell peppers for extra veggies. Swap out cheddar for Monterey Jack, pepper jack, or provolone. For added heat, mix in hot sauce or sliced jalapeños. Substitute ground turkey or plant-based meat for a lighter or vegetarian version.
