Ingredients
  

  • 1 cup long-grain white rice (Jasmine or Texmati)
  • cups water (or low-sodium chicken broth)
  • 1 tablespoon unsalted butter (or 1 tbsp olive oil for vegan)
  • 1 small garlic clove, minced
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon sugar balances acidity; optional
  • Zest of 1 medium lime use a microplane for fine zest
  • 2 tablespoons fresh lime juice (juice from 1–2 limes)
  • ¼ cup fresh cilantro, finely chopped (Italian flat-leaf)

Instructions
 

  • In a medium saucepan over medium heat, melt the butter (or warm the oil) until it shimmers. Add the minced garlic—stir for about 30 seconds until fragrant but not browned.
  • Pour in the rinsed rice and stir constantly for 1–2 minutes. You’ll see grains turning translucent at the edges—this step helps keep the rice fluffy and gives a subtle nutty taste.
  • Carefully pour in 1¾ cups water (or broth), then stir in salt and sugar. Increase heat to high, cover the pot, and bring to a gentle boil.
  • Once boiling, reduce heat to low and let it simmer, covered, for 15–18 minutes without lifting the lid. That’s the secret to perfect fluffy rice—resist lifting!
  • Turn off the burner and let the rice sit, still covered, for 5 minutes. This resting time lets steam finish the cooking and prevents mushiness.
  • Remove the lid, use a fork to gently fluff the rice, then stir in lime zest, fresh lime juice, and chopped cilantro. Give it a final taste—add a pinch more salt or an extra squeeze of lime if you’d like.

Notes

I learned that rinsing rice really makes a difference—your grains won’t stick together. If your kitchen’s at high altitude, add an extra tablespoon of water and a couple more minutes of simmering. For the brightest color, stir in cilantro right at the end—cooking it too long dulls its hue. Feel free to tweak salt and lime juice based on your taste buds—this recipe is forgiving.
