Ingredients
  

  • 1 cup creamy peanut butter natural or preferred brand
  • 1/2 cup unsalted butter softened (or use coconut oil)
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract pure
  • sea salt pinch
  • 12 ounces chocolate chips semi-sweet or dark
  • 1 tablespoon vegetable oil or coconut oil for gloss

Instructions
 

  • Line a baking sheet with parchment paper or a silicone mat for easy removal and cleanup.
  • In a large bowl, beat peanut butter and softened butter until smooth and creamy, about 2–3 minutes.
  • Stir in powdered sugar, vanilla, and a pinch of sea salt on low speed until a stiff dough forms.
  • Scoop tablespoonfuls of dough and roll into 1-inch balls, placing them on the lined tray.
  • Refrigerate or freeze the balls for 20–30 minutes to firm them up before dipping.
  • Combine chocolate chips and oil in a microwave-safe bowl; heat in 20-second intervals, stirring until smooth.
  • Dip each chilled ball in melted chocolate, tap off excess, and return to the tray; optionally sprinkle toppings.
  • Let balls sit at room temperature for 10 minutes, then transfer to the fridge for 10–15 more minutes to set.

Notes

Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months. Thaw in fridge before serving.
