Ingredients
  

  • 1 jar 16 oz dill pickle chips, drained and patted dry
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Oil for frying vegetable or canola

Instructions
 

  • Prepare the Filling:
  • In a small bowl, mix the shredded cheddar cheese and crumbled bacon. Set aside.
  • Stuff the Pickles:
  • Place a small amount of the cheese and bacon mixture on top of each pickle chip, pressing gently to adhere.
  • Set Up the Breading Station:
  • Prepare three bowls: one with flour, one with beaten eggs, and one with panko bread crumbs mixed with garlic powder, smoked paprika, salt, and pepper.
  • Coat the Pickles:
  • Dip each stuffed pickle chip in flour, then in the beaten eggs, and finally coat with the seasoned panko bread crumbs, pressing lightly to ensure good adhesion.
  • Fry the Pickles:
  • Heat about an inch of oil in a frying pan over medium-high heat to 350°F (175°C). Fry the pickles in batches for 2-3 minutes per side, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  • Serve and Enjoy:
  • Serve warm with your favorite dipping sauce, like ranch dressing or blue cheese dip.

Notes

For a gluten-free version, substitute almond flour for the all-purpose flour and use gluten-free breadcrumbs. To make a healthier version, cook the pickles in an air fryer at 400°F for 8-10 minutes, flipping halfway through.
