Ingredients
  

  • 4 large russet potatoes peeled and diced
  • 1 lb smoked sausage sliced into ½-inch rounds
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk whole or half-and-half
  • 1/2 cup sour cream
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions optional, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  • Place diced potatoes in a large pot of salted water, bring to a boil, and simmer until just tender, about 10 minutes; drain well.
  • Melt 1 tablespoon of butter in a skillet over medium heat, sauté the onion and garlic until fragrant, then add smoked sausage and cook for 3–4 minutes.
  • In a saucepan, melt remaining butter, whisk in flour, then gradually whisk in milk until smooth; stir in sour cream, cheddar, mozzarella, paprika, salt, and pepper.
  • Gently fold the cooked potatoes, sausage mixture, and cheese sauce in a large bowl, then transfer to the prepared baking dish.
  • Sprinkle extra cheese on top and bake for 25–30 minutes until golden and bubbly around the edges.
  • Let the casserole rest for 5 minutes, then garnish with chopped green onions and serve warm.

Notes

For a spicy kick, add a pinch of cayenne or swap smoked paprika for chipotle powder; leftovers keep in the fridge up to 4 days or freeze for 2 months.
