Ingredients
  

  • cups all-purpose flour King Arthur or Bob’s Red Mill for best texture
  • cups granulated sugar
  • ¾ cup unsweetened cocoa powder Ghirardelli or Hershey’s Special Dark
  • tsp baking powder
  • tsp baking soda
  • 1 tsp fine sea salt
  • 1 cup whole milk or sub plain Greek yogurt for extra moistness
  • ½ cup vegetable oil or melted coconut oil, lightly sweet
  • 2 tsp pure vanilla extract Rumford brand works beautifully
  • 1 cup hot brewed coffee or hot water boosts chocolate richness
  • cups powdered sugar sifted
  • ½ cup unsalted butter room temperature
  • ¼ cup unsweetened cocoa powder
  • 2-3 Tbsp milk or cream to reach desired consistency
  • Pinch of fine salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans, lining bottoms with parchment.
  • In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt until evenly distributed.
  • In another bowl, beat eggs, milk, oil, and vanilla until just combined.
  • Pour wet into dry ingredients, stirring until no streaks remain; add hot coffee last.
  • Divide batter between pans and bake for 28-32 minutes.
  • Let cakes cool before frosting with a mixture of butter, powdered sugar, cocoa, and milk.

• Adding hot coffee intensifies the chocolate flavor without tasting like coffee. • Avoid overmixing the batter for a tender crumb. • Room temperature ingredients lead to quicker emulsification and a fine crumb. • Adjust frosting consistency with more milk or powdered sugar as needed.
