Ingredients
  

  • For the Crust:
  • 1 1/2 cups all-purpose flour
  • 3/4 cup butter melted
  • 1 cup pecans finely chopped
  • For the First Layer:
  • 8 oz cream cheese room temperature
  • 1 cup confectioners’ sugar
  • 1 cup Cool Whip from an 8-12 oz. container, reserve the rest
  • For the Second Layer:
  • 1 package 3.4 oz vanilla instant pudding
  • 1 package 3.4 oz chocolate instant pudding
  • 3 cups whole milk
  • For the Top Layer:
  • Remaining Cool Whip
  • Grated or shaved chocolate for garnish

Instructions
 

  • Prepare the Crust:
  • Preheat the oven to 350°F (175°C). In a bowl, combine flour, melted butter, and chopped pecans. Press mixture evenly into a 9x13-inch baking dish. Bake for 15 minutes or until set. Let it cool completely.
  • Make the First Layer:
  • In a mixing bowl, blend the cream cheese and confectioners' sugar until smooth. Fold in 1 cup of Cool Whip. Spread evenly over the cooled crust. Place in the freezer to chill until firm.
  • Create the Second Layer:
  • Whisk together vanilla and chocolate pudding mixes with 3 cups of cold whole milk. Whisk until thickened. Spread over the chilled cream cheese layer. Refrigerate to set.
  • Top the Cake:
  • Spread the remaining Cool Whip evenly over the pudding layer. Garnish with grated or shaved chocolate.
  • Chill and Serve:
  • Refrigerate the cake for at least 2 hours to set all layers. Slice and serve cold. For clean cuts, dip the knife in hot water and wipe it dry between each slice.

Notes

For a nut-free version, substitute pecans with crushed graham crackers. For a dairy-free option, use plant-based substitutes for cream cheese, milk, and whipped topping.
