Ingredients
  

  • 1 pound fresh green beans trimmed
  • 8–10 slices thin-cut bacon applewood-smoked recommended
  • 1 tablespoon olive oil extra-virgin, cold-pressed if desired
  • 1/2 teaspoon sea salt or coarse kosher salt
  • 1/4 teaspoon black pepper freshly cracked
  • 2 tablespoons grated Parmesan cheese optional garnish
  • 1/2 teaspoon red pepper flakes optional garnish

Instructions
 

  • Preheat the oven to 400°F (205°C) and line a rimmed baking sheet with parchment paper.
  • Rinse and dry the green beans thoroughly, then toss them in a bowl with olive oil, salt, and pepper until coated.
  • Lay out a slice of bacon, bundle 6–8 green beans, wrap the bacon around the center, and secure with a toothpick or kitchen twine.
  • Place the bundles seam-side down on the baking sheet, spaced apart. Roast for 15 minutes, flip, and continue roasting until bacon is crisp and green beans are tender.
  • Sprinkle Parmesan cheese over the bundles in the last 2 minutes of baking. Add red pepper flakes before serving for extra kick.
  • Let the bundles rest for a few minutes on the pan to allow the bacon to firm up before serving.

Notes

For a cheesy finish, sprinkle Parmesan cheese over the bundles before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Prepare bundles ahead, refrigerate, and bake when ready.
