Ingredients
  

  • 6 cups bread flour King Arthur or Bob’s Red Mill
  • 2 tablespoons granulated sugar substitute honey or agave
  • 2 teaspoons active dry yeast or instant yeast
  • 2 cups warm water 110°F/43°C
  • 2 tablespoons unsalted butter softened, plus extra for brushing
  • 1.5 teaspoons salt fine sea salt
  • Optional milk powder 2 tablespoons for richer flavor
  • Optional seeds sesame, poppy, or oats

Instructions
 

  • Whisk warm water (110°F) with sugar until dissolved, sprinkle yeast, stir gently, and let stand 5–10 minutes until foamy.
  • In a large bowl, combine bread flour, salt, and optional milk powder; toss to distribute evenly.
  • Add yeast mixture and softened butter to the flour, stirring with a wooden spoon until a shaggy dough forms.
  • Turn dough onto floured surface and knead 8–10 minutes until smooth, elastic, and slightly tacky.
  • Place dough in an oiled bowl, cover, and let rise 1–1.5 hours until doubled.
  • Divide dough in half, shape into logs, and place in greased 9×5-inch pans.
  • Proof covered pans 45–60 minutes until dough peaks over pan edges.
  • Bake at 375°F for 25–30 minutes until crust is deep golden and internal temp reaches 190°F.
  • Remove from pans and cool on a wire rack for 30 minutes before slicing.

Notes

For extra fluffiness, try an overnight cold fermentation: shape loaves, wrap pans, and refrigerate 8–12 hours before baking.
